Whether your summer plans include sitting by the pool, floating on a lake, or just lounging outside on a warm and sunny day, this poolside dip is perfect as a personal snack or for sharing at your next summertime get-together. The creamy dip is made with a base of Greek yogurt and cream cheese flavored with ranch seasoning, and then it is loaded up with crunchy vegetables, like colorful chopped sweet peppers and fire-roasted corn.
This hefty snack is best served alongside hearty chips and raw veggies, such as carrot sticks, thick bell pepper strips or broccoli florets. The summer party recipe makes enough to feed a small crowd and is sure to gather rave reviews from all your guests.
Poolside Dip Ingredients
Cream cheese: You’ll need an 8-ounce brick of plain cream cheese to make this dip. To easily incorporate the rest of the ingredients, soften the cream cheese first.
Greek yogurt: Greek yogurt gives the dip its creamy texture and enhances its tangy flavor, but you can swap in sour cream if you prefer.
Ranch dip mix: A packet of ranch seasoning gives this dip its signature ranch flavor. For prepping ease, you can use a store-bought packet, or try our homemade ranch dressing mix recipe. You’ll need 3 tablespoons to flavor this dip.
Canned diced green chiles: You need one 4-ounce can of diced green chiles for this recipe. (You can also used fire-roasted or hatch chile varieties.) Lightly drain the green chiles before stirring them into the dip.
Black olives: One 2.25-ounce can of sliced black olives is added to this recipe. Drain the olives before adding them to the dip.
Fire-roasted corn: You can use either one 14.75-ounce can of fire-roasted corn or a 12-ounce package of frozen fire-roasted corn. If you opt for the can, drain the corn first; if you go for the frozen bag, thaw the corn first.
Green onion: Thinly sliced green onions add a mild onion flavor and contribute to the crunchy texture of the dip.
Fresh parsley: Fresh chopped parsley is used to garnish the dip before serving.
Dippers: Serve the dip alongside a selection of dippers, including chips, raw vegetables and crackers. Because this dip is fairly thick, it’s best served with sturdy dippers.
