For the Honey Lime Chicken
500g Chicken Thighs or Breasts, cut into bite-sized cubes
3 Tablespoons Honey
Juice and Zest of 2 Juicy Limes
2 Cloves Garlic, mincedFruits & Vegetables
1 Tablespoon Soy Sauce
1 Tablespoon Olive Oil
½ Teaspoon Smoked Paprika
For the Rice Base & Layers
2 Cups Jasmine or Basmati Rice, cooked and kept warm
2 Large Ripe Avocados, thinly sliced
¼ Cup Fresh Cilantro, finely chopped
1 Teaspoon Red Chili Flakes (for that gorgeous pop of color and heat)
Instructions
1. Cook the Sticky Chicken
In a bowl, whisk together the honey, lime juice, lime zest, minced garlic, soy sauce, and smoked paprika.
Heat olive oil in a large skillet over medium-high heat. Add the chicken cubes and sear until golden brown on all sides (about 5-6 minutes).Garlic
Pour the honey-lime glaze into the skillet. Bring to a simmer, stirring continuously, until the sauce reduces into a thick, sticky glaze that completely coats the chicken pieces. Remove from heat.
2. Build the Rice Base
To build a clean tower, you can use a round metal food mold (ring mold). If you don’t have one, cut the top and bottom off a clean plastic container or an empty tin can to create a DIY cylinder.
Place the mold onto your serving platter. Pack the warm cooked rice tightly into the bottom third of the ring, pressing down firmly with the back of a spoon so it holds its shape.
