Cinnamon Sugar Elephant Ears

Ingredients
1 package puff pastry (2 sheets), thawed
1 cup granulated sugar
2 tablespoons ground cinnamon
1/4 cup unsalted butter, melted

Directions
Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
In a small bowl, mix together the sugar and cinnamon until well combined.
Roll out one sheet of puff pastry on a lightly floured surface into a rectangle, about 1/8 inch thick.
Brush the surface of the pastry with melted butter, then sprinkle generously with the cinnamon sugar mixture.
Starting from one long side, roll the pastry tightly towards the center. Repeat with the other side until both rolls meet in the middle.
Slice the rolled pastry into 1/2-inch thick pieces and place them cut side up on the prepared baking sheets, leaving space between each piece.
Repeat the process with the second sheet of puff pastry.
Bake in the preheated oven for 12-15 minutes, or until the pastries are golden brown and crispy.
Remove from the oven and let cool slightly before serving.
Variations & Tips
For a chocolate twist, sprinkle some mini chocolate chips over the cinnamon sugar before rolling the pastry. You can also add a pinch of nutmeg or cardamom to the cinnamon sugar mixture for a spiced variation. If you prefer a savory version, skip the sugar and cinnamon, and instead brush the pastry with olive oil and sprinkle with grated Parmesan and herbs like rosemary or thyme before rolling.
