Key Lime Pie Cookies

Preheat oven to 350°. In a large bowl, cream butter, shortening and sugar until light and fluffy, 5-7 minutes. Beat in egg, egg yolk, and lime zest and juice. In another bowl, whisk flour, cream of tartar, baking soda and salt; gradually beat into creamed mixture.

Shape tablespoonfuls of dough into balls. Roll in graham cracker crumbs and place 2 in. apart on greased baking sheets. Bake until edges just begin to crack and tops are set, 8-10 minutes. Let cool for 5 minutes before removing from pans to wire racks to cool completely.
