1 pound ground beef
8 ounces long yellow noodles
1 green bell pepper, sliced
2 carrots, sliced

Directions
1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
2. In the slow cooker, combine the cooked ground beef, sliced bell pepper, carrots, onion, and minced garlic.
3. In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, cornstarch, and beef broth until smooth.
4. Pour the sauce mixture over the beef and vegetables in the slow cooker. Stir to combine.
5. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the vegetables are tender.
6. About 30 minutes before serving, cook the noodles according to package instructions. Drain and add them to the slow cooker.
7. Stir everything together to ensure the noodles are well coated in the sauce.
8. Season with salt and pepper to taste, then serve hot, garnished with sesame seeds and green onions if desired.
Variations & Tips
For a vegetarian version, substitute the ground beef with crumbled tofu or tempeh. You can also add more vegetables like broccoli, snap peas, or mushrooms for extra nutrition. If you prefer a spicier dish, add a teaspoon of chili paste or a dash of hot sauce to the sauce mixture. For a gluten-free option, use rice noodles and tamari instead of soy sauce.
