German Chocolate Layer Cake

Prepare the cake batter

Begin by preheating your oven to three hundred fifty degrees Fahrenheit so the temperature becomes steady before baking. Grease and dust three round cake pans so the batter does not stick. In a large bowl mix the flour, sugar, cocoa, baking powder, baking soda, and salt. Stir these dry ingredients well so the mixture becomes smooth and even.

In another bowl mix the warm milk, vegetable oil, eggs, and vanilla extract. Whisk until the mixture looks uniform and creamy. As it heats up, the mixture will slowly thicken. Once it becomes thick and creamy remove the pan from the heat. Stir in the shredded coconut and chopped pecans. Let the mixture cool until it becomes spreadable.

Prepare the chocolate frosting

In a large bowl beat the butter until creamy. Add the powdered sugar and cocoa gradually while mixing at a slow speed so the mixture stays smooth. Pour in the milk and vanilla extract and continue mixing until the frosting becomes fluffy. If it appears too thick, add a little more milk. If it seems too thin, add a bit more powdered sugar.

Assemble the cake

Place the first cake layer on a serving plate. Spread a generous amount of the coconut pecan filling on top and make sure it reaches all edges. Add the second cake layer and repeat the same step. Place the final cake layer on top. Cover the sides and top of the cake with the chocolate frosting. You may spread a little of the coconut filling on top for decoration if desired.
