Crispy fried mushrooms

Instructions:

1. Prepare the Mushrooms:

  • Clean the mushrooms gently with a damp cloth or brush. If they’re large, cut them in half or quarters for even cooking.

2. Make the Batter:

  • In a large bowl, whisk together flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper.

  • Add cold club soda (or beer/water/milk) and egg (if using). Mix until smooth (the batter should be slightly thick but pourable).

3. Heat the Oil:

  • Fill a deep pot or frying pan with 1-2 inches of oil and heat to 350–375°F (175–190°C).

4. Coat & Fry the Mushrooms:

  • Dip each mushroom into the batter, letting excess drip off.

  • Carefully place a few mushrooms into the hot oil (don’t overcrowd).

  • Fry for 2–3 minutes until golden brown and crispy.

  • Remove with a slotted spoon and drain on a paper towel-lined plate.

5. Serve Hot:

  • Sprinkle with extra salt if needed.

  • Serve with ranch, aioli, or lemon wedges and garnish with fresh parsley.

Tips for Extra Crispiness:

✅ Use cold liquid (club soda/beer) for a lighter batter.
✅ Double fry: Fry once at 350°F, let rest, then fry again at 375°F for extra crunch.
✅ Add 1 tsp baking powder to the batter for extra puffiness.
