Baked Pork Chops

How do you know when baked pork chops are done?
It’s all about the meat thermometer! If you catch them at 145°, you’re golden. If you don’t have a thermometer, press the center of each chop. A rare chop will have a lot of give, and will be oozing red liquid. A well-done chop with have very little give, and clear liquid. A medium chop will be right in between.

How thick should pork chops be for baked pork chops?
This recipe calls for 8-ounce bone-in pork chops, which will likely be on the thinner side, depending on your butcher. You can substitute thicker or thinner chops if you prefer, just adjust the cooking time accordingly. If you ended up buying boneless chops, expect a quicker cooking time. (Bone-in meat is generally more juicy, but it also takes longer to bake in the oven!)

How long do pork chops take to bake?
The chops in this recipe take about 25 minutes to bake before hitting an internal temperature of 145°. Start testing the temperature of thinner chops after they’ve been in the oven for around 20 minutes, and start testing thicker chops after 23 minutes.

Which types of chops are the best?
Rib chops, loin chops and center cut bone-in chops are excellent pork cuts. Sirloin and shoulder chops are tougher and benefit from a nice long soak in a marinade before cooking. Thus, they aren’t the ones you’ll want for this recipe.

1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon pepper
4 bone-in pork loin chops (8 ounces each)
1 tablespoon olive oil

Preheat oven to 350°. Combine the first 7 ingredients. Drizzle chops with oil; rub spice mixture over both sides of pork chops. Place in a greased 13×9-in. baking dish.

Bake, uncovered until a thermometer reads 145°, 25-30 minutes. Let stand 5 minutes before serving.
