This mini s’mores recipe solves that problem, recreating the classic s’mores flavor without a campfire or any flame. Melted chocolate chips and dipping chocolate take the place of the chocolate bar, and a jar of marshmallow creme replaces bagged marshmallows. No smoky odor in your clothing, no mosquitoes—and no chance of accidentally burning the marshmallows! It’s all the fun of making s’mores desserts without straying too far from the original design.
Ingredients for Mini S’mores
Milk chocolate chips: The milk chocolate pairs with the whipping cream, melting into a delicious chocolaty spread inside the s’mores. Since the chocolate is so important to the integrity of this recipe, splurge on the best chocolate chips from the store. If they’re too expensive, make your own chocolate chips at home for half the price!
Heavy whipping cream: The whipping cream helps turn the chocolate chips into spreadable chocolate. If you can’t find heavy whipping cream, use regular whipping cream, which has slightly less milkfat.
Graham crackers: The crackers contribute to the flavor of the s’mores and give them a solid structure. Before you get started, break the graham crackers into quarters along the perforated lines—and do this for an entire box of graham crackers.
Marshmallow creme: The marshmallow creme takes the place of actual marshmallows; using it also eliminates the need for a flame. Save leftovers for recipes with marshmallow creme, like homemade Rice Krispies treats or easy fudge.
Milk chocolate for dipping: The dipping chocolate adds even more chocolate flavor to the s’mores, and gives them a touch of elegance. Make sure to melt the chocolate properly; it will burn easily in the microwave if you’re not careful.
Directions
Step 1: Melt the chocolate
Place the chocolate chips in a small bowl. In a small saucepan, bring the heavy cream just to a boil. Pour the cream over the chocolate, then stir them together until the mixture is smooth. Allow the mixture to cool to room temperature or until it reaches a spreading consistency, about 10 minutes.
Step 2: Assemble the s’mores sandwiches
Spread the chocolate mixture over half of the quartered graham crackers. Spread marshmallow creme over the remaining graham crackers. Place the marshmallow sides and the chocolate sides together, pressing to adhere them.
Step 3: Dip the s’mores in chocolate
Melt the dipping chocolate according to the package directions. Dip each s’more halfway into the chocolate, allowing the excess to drip off. Place the dipped s’mores on waxed paper–lined baking sheets, and let them stand until the chocolate is set.
