Instructions
1.Prepare the chicken:
Pat the chicken pieces dry with paper towels. This helps the seasoning stick better.
2.Make the spice rub:
In a bowl, mix together paprika, brown sugar, garlic powder, onion powder, chili powder, black pepper, salt, cumin, and mustard powder.
3.Season the chicken:
Drizzle olive oil over the chicken, then coat well with the spice rub. Make sure each piece is evenly covered.
4.Marinate (optional):
Cover and refrigerate for at least 1–2 hours (or overnight) for deeper flavor.
5.Cooking (two options):
•Oven: Preheat oven to 200°C (400°F). Place chicken on a baking tray with parchment paper or lightly greased. Bake for 35–45 minutes, flipping halfway, until crispy and cooked through.
•Grill/BBQ: Preheat grill to medium heat. Cook chicken 25–30 minutes, turning occasionally, until nicely charred and cooked through.
6.Optional glaze:
In the last 10 minutes of cooking, brush chicken with barbecue sauce for a sticky, smoky finish.
7.Serve hot with sides like salad, fries, or bread.
